The Pro X is superior for making coffee. Dual boiler, PID, and faster heat-up (the Appartamento needs more than 30 minutes 😬).
But you say the Appartamento appeals to you much more, and that's one of the most important things.

It seems like the boiler is overfilling. The safety valve opens and dumps water into the drip tray to lower the pressure inside. It has to purge the excess water from the steam wand before it can reach steam.

From what I've read, the Silvia Pro X seems to be the technically superior machine with a dual boiler, PID temperature control, better temperature stability, and an easier workflow.
On the other hand, I absolutely love the look of the Rocket. The E61 design, polished metal and copper accents, and overall aesthetic appeal to me much more than the Silvia.
